Good barbecue cooking comes from managing heat rather than chasing it. The Colorado uses a central wood fire beneath four 8mm thick 304 stainless steel cooking plates, creating a clear gradient of temperatures from the middle outward. Steaks can sear close to the heat, vegetables can cook more slowly at the edge, and fish can be placed where the heat is softer. You move food rather than adjusting controls, which quickly feels intuitive.

The wide cooking surface allows several dishes to be prepared at once, making it well suited to social cooking. Food can be turned, rested and finished across different zones while guests stand around the fire. With the optional stainless steel grill, you can switch between flat plate cooking and traditional grilling, adding a second method without changing the setup.
